I love this recipe for many reasons!

You can make it in bulk, it reheats great, switch out or add ingredients that you love, and you can easily hide more vegetables in it for your kids all they will taste is the cheesy goodness!!

Sweet Potato Taco Bowls

Instead of making a taco salad switch it up for sweet potatoes and quinoa for a base!

Let your kids choose other toppings to add from avocado, beans, corn, onion, tomatoes, and peppers!

Spinach Meatloaf

I use a recipe from “How to cook everything” but just google search or add spinach to your current meatloaf recipe.  You will need to boil water and and wilt the spinach before adding it into the meatloaf mix, and add chopped carrots for a for more vegetables.


Risotto Rice Chicken and Vegetables Mix

This is so easy and quick, bake or saquette chicken with garlic, follow the Knorr directions for the rice and add frozen peas and carrots at the end, chop up the chicken add and serve.  

Chilli

Brown either ground beef or turkey, Kidney beans, chilli beans, chop up peppers, sweet potatoes, onions, putt them all together in a crock pot with low sodium tomato sauce add chilli powder, cumin, and garlic to taste.  When it is served you can top it with some type of cheese, and possibly some crunchy chips!



I hope this gives you an idea of a few meals you can make that will be tolerable for your kids, also leave the fruit off the plate until desert time, I know my kid will eat that first if it is available.
