Easiest & Healthy Zucchini Bread!
Ingredients
- 1 1/2 cups shredded zucchini
- 6 eggs
- 1/4 cup melted butter
- 3/4 cup coconut flour
- 1/4 cup raw honey
- 2 Tbsp. vanilla
- 3/4 tsp. baking soda
- 1 1/2 Tbsp cinnamon, (more or less as desired)
Instructions
- Preheat oven to 350 degrees
- Line bread pan with parchment paper
- Combine all wet ingredients and stir until well mixed
- Add dry ingredients and mix well
- Stir in zucchini and make sure to mix well again
- Pour into pan and bake for about 50 minutes
- Let cool for 5-10 minutes before serving
- Enjoy!!
Notes
Optional:
- 1 cup of chocolate chips
- 1 cup chopped walnuts
- 1/4 cup coconut oil in place of butter if you need to make it dairy-free
